Dawa ko Chhang
From Himalayan Roots to Modern Brewing
Yak&Brew was born from the personal journey of founder Dawa Lama, who grew up between the Himalayan regions of Nepal, Darjeeling, and Sikkim — places where Tongba and Chhang were more than traditional drinks. They were part of everyday life, shared during family gatherings, festivals, winter evenings, and long conversations around the fire.
For Dawa, these memories stayed deeply personal. The warmth of a freshly brewed Tongba, the aroma of fermented millet, and the sense of community around the drink became something he wanted to preserve and share beyond the Himalayas.
Years later, after moving abroad, Dawa realized that authentic Himalayan brewing traditions were difficult to access outside the region. Most people had never experienced real Tongba or Chhang, and even those who had often struggled to recreate the traditional process properly at home.
That challenge became the foundation of Yak&Brew.
Driven by a passion to protect and modernize Himalayan brewing culture, Dawa spent years testing recipes, studying traditional fermentation methods, refining yeast cultures, and simplifying the brewing process for modern kitchens — without losing authenticity.
The result is a carefully designed line of Yak&Brew brewing kits and fermentation starters that bring genuine Himalayan brewing traditions into homes around the world.
Every product — from the Tongba DIY Kits to the Chhang Fermentation Starters — is inspired by traditional Himalayan practices while being crafted for consistency, safety, and ease of use.
At the center of the process is the yeast culture itself — the essential ingredient that transforms cooked millet and grains into authentic Tongba and Chhang. Without it, the fermentation simply does not happen. Yak&Brew’s fermentation starters are developed to recreate the bold, earthy flavors and smooth fermentation traditionally found in Himalayan homes and mountain breweries.
Yak&Brew is not just selling brewing products. It is preserving a cultural tradition, one brew at a time.
